I'm surprised Billy Strings is not on this list. He has rose in populatiry, tours 300 days a year, and have an incredibly diverse set list. I would be curious if you could somehow cross Setlist.FM data with Nugs.net, a live streaming service that works with a lot of these artists.
Interesting, but it's about interpretation too. Dylan could have had the same set list since 1966 and it would sound different every night.

Wasn’t included in my sample because he didn’t play at one of the venues I was looking at. Possible he’d be up there.
